Owners Mara and Del Chen began roasting five-pound batches in their garage in 2016, selling bags out of a hatchback at the farmers market. A decade later the roaster is bigger, but the ritual hasn't changed: we cup every lot before it earns a place on the menu, and we still hand-write the roast date on every bag.
